{"id":678,"date":"2011-02-07T07:33:49","date_gmt":"2011-02-07T13:33:49","guid":{"rendered":"https:\/\/elizabethshack.com\/blog\/?p=678"},"modified":"2011-02-07T07:33:49","modified_gmt":"2011-02-07T13:33:49","slug":"bean-salad","status":"publish","type":"post","link":"https:\/\/elizabethshack.com\/blog\/2011\/02\/07\/bean-salad\/","title":{"rendered":"Bean salad"},"content":{"rendered":"<p>I&#8217;ve been eating canned soup for lunch for months and am tired of it, so for the past several weeks I&#8217;ve been bringing in bean salads instead. <\/p>\n<p>This <a href=\"http:\/\/www.nytimes.com\/2010\/11\/16\/health\/nutrition\/16recipehealth.html\">lentil and tuna salad<\/a> from the New York Times sounds strange but was really good. I like lentils, but they don&#8217;t have much flavor on their own; mixing them with tuna and the mustard and garlic in the dressing adds a lot. <\/p>\n<p>Probably my favorite so far has been the black bean and avocado salad (with tomato, bell pepper, and lime juice). It&#8217;s impossible to not like something with avocado in it.<\/p>\n<p>Chickpea, carrot, and feta salad wasn&#8217;t as good (even without the anchovy), though I&#8217;ve added green olives to the leftovers which should help with the blandness.<\/p>\n<p>Anyone got any outstanding bean salad recipes?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been eating canned soup for lunch for months and am tired of it, so for the past several weeks I&#8217;ve been bringing in bean salads instead.
